My Spaghetti Sauce (stovetop)

Ingredients
- 2 lamb shanks
- 5 or 6 marrow bones
- 6 Italian sausage (3 sweet, 3 hot)
- Meatballs
- Olive oil (about 5-6 Tbsp - for sauteing meat and onions)
- 3 medium yellow onions, chopped
- 7 or 8 cloves garlic, chopped
- 1 5 lb. can San Marzano peeled tomatoes (strain through mill or colander)
- 1 large (28 oz.) can Progresso tomato puree
- 2 large (15 oz.) cans Cento tomato sauce
- 1 large (12 oz.) can tomato paste (if cooking on stove, use 1 small can)
- Large stalk of basil (or basil leaves tied up)
- 2 bay leaves
- Large pinch of salt, and some black pepper
- 1 About 1 Tbsp. garlic powder
- Approx. ½ C. red wine (Chianti) (divided)

Preparation
Step 1
In a large frying pan, brown sausage, lamb shanks, marrow bones in 3-4 T olive oil. Set aside. Add about 2 Tbsp. olive oil and chopped onions to pan, sauté until opaque, then add garlic. Add tomato paste and cook for about 3 or 4 minutes. Then add about ¼ C wine to "clean" bottom of pan. Let onions and wine cook for a few minutes.
Place onion mixture into large stock pot. Add tomatoes, tomato puree and tomato sauce. Add lamb shanks and marrow bones.
Add basil, bay leaves, salt, pepper, and garlic powder.
Simmer, covered, on low for about 2 hours, stirring every half hour.
Remove shanks and bones (if marrow remains in center of bones, remove it and add to the sauce). Add meatballs and sausage, and the remaining 1/4 C red wine.
(If you have an end rind of parmisano reggiano or romano cheese add it to the sauce when you add the meatballs and sausage)
Bring to a simmer, and continue cooking for another half hour.
