Spiced Bismati Rice

Ingredients
- 2 cups Basmati rice
- 3 Tbsp. vegetable oil
- 1 sm. Onion, finely chopped
- ½ Fresh green chile, chopped, seeds removed
- ½ tsp. minced garlic
- ½ tsp. garam marsala
- 1 tsp. salt
- 2 2/3 cups chicken stock

Preparation
Step 1
1. Wash rice in several changes of water. Drain.
2. Heat oil in a pan and fry the onion until browned.
3. Add the rice, chile, garlic, garam marsala, and salt.
4. Stir gently to coat the rice grains with oil.
5. Pour in stock and bring to a boil. (Can add peas or frozen vegetables at this point).
6. Cover with a tight fitting lid. Turn the heat very low and cook for 25 minutes, OR preferably transfer the rice mixture to a lidded baking dish and cook in a preheated oven at 325 degrees for 25 minutes with the Mango Chicken.
