Ingredients
- Makes 7 or 8 pancakes
- 1 1/4 cups all-purpose flour
- 1 egg
- 1 1/4 cups buttermilk
- 2 tbsp. granulated sugar - I used Palm sugar
- 1 heaping teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup canola oil
- 1 tsp. vanilla extract
- pinch of salt

Preparation
Step 1
* Combine all ingredients in a large measuring cup and mix with stick blender until smooth.
* Preheat a non-stick skillet over medium heat. Use a pastry brush to lightly coat the pan with canola oil.
* Laddle approximately 1/5 cup of the batter into the hot skillet, forming 5-inch circles.
