Ingredients
- 1 16 oz. package thawed frozen green beans cut
- 1/2 pint green beans (cherry)
- 3 T minced red onion
- 2 T. White wine vinegar
- 2 T. Water
- 2 t olive oil
- 1 T grated Parmesan cheese
- 1/4 t salt
- 1/4 t fresh or dried thyme
- 1/4 t. Pepper
- 1 clove garlic, minced
- 1/2 red or yellow bell pepper cut into thin slices
- Add artichoke hearts and or water chestnuts if desired
Preparation
Step 1
Cook green beans in salted water 3-4 minutes. Drain well.
Combine beans, tomatoes, and onions, toss gently. Whisk together vinegar and next 7 ingredients until well combined. Pour over bean mixture and toss to coat. Either serve at room temperature or chill.
