Ingredients

  • 2/3 cup butter OR margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa
  • 1/2 tsp baking soda
  • 10 oz. package Hershey’s Mint Chocolate Chips

Step 1

Preheat the oven to 350 degrees Fahrenheit. In a large bowl, beat the butter and sugar until the mixture has a creamy consistency. Add the egg and vanilla to the mixture and beat well. In a separate bowl, combine the flour, cocoa, and baking soda. Gradually add the dry mixture to the butter mixture and beat well. Stir the mint chocolate chips into the batter and mix with a spoon. Drop the cookies by rounded teaspoon onto an UNgreased cookie sheet. Bake the cookies for 9 minutes or just until the cookies are set. Do NOT over bake the cookies!! Cool slightly and remove the cookies from the baking sheet to a wire rack to cool. Allow the cookies to cool completely and enjoy!
