Waffles

For chocolate waffles; Reduce flour to 1 1/2 C. Add 1/3 C. sifted unsweetened cocoa powder and 1/3 C. sugar to the flour mixture. Add 1 tsp. Vanilla to the egg yolk mixture.

- 1 3/4 C. flour
- 1 Tbs. baking powder
- 1/4 tsp. salt
- 2 egg yolks
- 1 3/4 C. milk
- 1/2 C. oil
- 2 egg whites

Step 1
In a mixing bowl combine flour, baking powder, and salt. In another bowl beat egg yolks slightly. Beat in milk and oil. Add egg yolk mixture to flour mixture all at once. Stir just till combined but still slightly lumpy.
In a small bowl beat egg whites till stiff peaks form. Gently fold beaten egg whites into flour and egg yolk mixture, leaving a few fluffs of egg white. Do not overmix.
Pour 1-1 1/4 C. batter onto grids of a preheated, lightly greased waffle baker. Close lid quickly; do not open during baking. Bake according to iron directions. Makes 3-4 waffles
