For the Brie thing, just wrap the Brie up in Pillsbury croissant dough and basically follow the directions as if you were baking croissants. (Keep on eye on it too. Basically, it has to be nicely browned. If it doesn't heat enough, the cheese won't be melted enough.) It can be served with anything, actually. Pear slices are nice. And red pepper jelly would probably be fine too. Whatever strikes your fancy! (Mango chutney is another option.)
