Louisiana Espresso Cake

Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs, well beaten
- 1/2 cup seeded raisins, chopped
- 1/4 cup molasses
- 1 tsp cinnamon
- 1 tsp mace
- 1 tsp cloves
- 1 tsp baking soda
- 1/2 cup (4 ounces) brewed espresso, refrigerated
- 2 cups flour, sifted

Preparation
Step 1
Cream the butter well and add the sugar slowly. In another bowl, mix the eggs, raisins, molasses and spices. Stir into the butter and sugar mixture.
Dissolve the baking soda in the espresso and stir into the above mixture. Mix well.
Add the flour, folding in gently. Bake in a greased 9-inch square pan in a preheated 350 F oven for about 40 minutes. Cut into squares and serve either warm or cold with cappucino.
