In food processor process cookies and butter until fine crumbs. Press crumb mixture into 9 inch pie plate. Chill until ready to use. To make custard, in saucepan combine sugar and cornstarch. Stir in milk. Cook over medium heat 3-4 minutes until sugar is dissolved. Remove from heat. Stir 1 cup milk-sugar mixture into eggs; slowly stir mixture back into milk-sugar mixture. Cook 6-8 minutes until thickened, stirring constantly. Stir in coconut and vanilla; cool. Pour custard into crust. Chill 2 hours until firm. Top pie with whipped cream. Garnish.
