  • 2 tablespoons virgin olive oil
  • 1 tablespoon garlic
  • 1/3 cup white wine
  • 1 bag fregole media or piccola
  • 4 cups hot broth for fregole or 3 cups for piccola

Preparation

Step 1

Simmer oil, garlic and wine in large skillet over medium heat for 1 minute. Add bag of fregole, toss to coat. Slowly add hot broth to cover pasta. Continue to gradually add hot broth as it is absorbed in skillet. Pasta will cook up in approximately 12-15 minutes for fregole, 8-10 minutes for piccola.

Suggested Add ins:

1 cup pasta sauce and ½ cup grated parmesan, romano or assaigo cheese.
2 cups cooked vegetables
2 cups cooked Italian sausage, out of casing
2 cups cut up chicken
