YUMMY BEAN SALAD

This is a great salad to serve with almost any meat, grilled or roasted.
I like it with Pork Roast

Ingredients
- 1-15 oz can chick peas, drained and rinsed
- 1-15 oz can red kidney beans, drained and rinsed
- 1 cup blanched green beans, cut into 1/2 inch pieces
- 4 chopped scallions, or 2 chopped scallions and 1/2 red onion
- 2 stalks of celery, cut into 1/2 inch pieces
- 1/2 apple cider vinegar
- 1/4 cup olive oil
- 1 tablespoon honey
- 1/2 teaspoon dry mustard
- 2 teaspoons minced garlic
- 1/4 teaspoon fresh ground black pepper
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon salt, optional

Step 1
1. Combine the chick peas, red kidney beans, blanched green beans, scallions and celery
2. Whisk together the apple cider vinegar, olive oil, honey, dry mustard, minced garlic, ground black pepper, dried Italian herbs and salt.
3. Pour the dressing mixture over the bean mixture. Carefully toss until well mixed. Chill for one hour.
4. Toss salad again before serving.
