Ingredients

  • 1 12-ounce (341 mL) can kernel corn
  • 1 14-ounce 9398 mL) can tomato sauce
  • 1 tsp salt
  • Pepper
  • 1 large potato, thinly sliced
  • 1 medium onion, chopped
  • 1/2 cup parboiled rice
  • 1 cup frozen peas
  • 3/4 lb lean ground beef, crumbled
  • 3 strips bacon, halved and partially cooked
  • 1/3 cup shredded Cheddar cheese

Preparation

Step 1

Drain corn, reserving liquid in a measuring cup; pour enough water in to make 1 cup. Stir in tomato sauce along with salt, and pepper to taste.

In greased six-cup casserole, layer potato, onion, then rice; pour half the tomato sauce mixture over the top. Layer with corn, peas and beef; top with remaining sauce.

Cover and bake in 350F oven for 1.5 hours. Top with bacon and cheese; bake, uncovered, 15 minutes.
