Ingredients

  • 9 lasagna noodles
  • 2 Jars favorite pasta sauce or homemade
  • 1/2 minced onion
  • 1 10oz package frozen chopped spinach, thawed and squeezed dry
  • 2 teaspoons minced fresh parsley or dried
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups Shredded Mozzarella Cheese, divided
  • 1/2 cup grated Parmesan Cheese, divided
  • 1 (15 ounce) container ricotta cheese
  • 1 cup cottage cheese
  • 2 eggs, beaten

Preparation

Step 1

1.Preheat oven to 350 degrees F (175 degrees C).
2.Bring a large pot of lightly salted water to a boil. Add the lasagna noodles and cook until al dente, 8 to 10 minutes; drain.
3.Heat up Jar Sauce or homemade sauce
4.Meanwhile, mix together the ricotta cheese, cottage cheese, spinach, onion, eggs, 1/4 cup Parmesan cheese, and 1 cup Mozzarella in a bowl.
5.Ladle enough of the meat sauce into a 9x13 inch baking dish to cover the bottom in a thin layer. Form a layer atop the sauce with 3 of the lasagna noodles. Spread about 1/4 of the ricotta cheese mixture over the noodles then ladle about 1/3 of the meat sauce over the mozzarella cheese. Repeat layering twice more.
6.Bake covered with foil in preheated oven 80 minutes. Uncover; sprinkle with remaining parmesan and mozzeralla cheeses. Bake uncovered for 10-15 more minutes until cheese is melted. Allow to sit 10 to 15 minutes before cutting and serving.
