Faux Fried Pickles

Southern fried pickles are great, but they are fried! These oven "fried" are great. Serve with ranch dressing or spicy sauce recipe included here

Ingredients

  • Dill pickle slices
  • 1 or 2 eggs, beaten
  • Buttermilk
  • Seasoned panko bread crumbs
  • Regular bread crumbs
  • Cayenne pepper
  • Salt
  • Pepper
  • Cooking spray
  • Sauce
  • 1/4 cup mayonnaise
  • 1 tablespoon drained horseradish
  • 2 teaspoons ketchup
  • 1/4 teaspoon Cajun seasoning

Preparation

Step 1

Preheat oven to 400 degrees.
Dry the pickle slices well. Place beaten egg in shallow bowl. Mix in a little buttermilk. In another bowl, mix panko, bread crumbs and spices. Season to taste.

Dip pickles in egg mixture, then roll in the bread crumbs. Lay on nonstick baking sheet ( or use nonstick foil.) Spray lightly with cooking spray. Bake until golden and crispy.

Serve with light ranch dressing.

Sauce:
Mix all sauce ingredients and refrigerate until ready to use.
