Toppings are a quick and easy way to add zip to a plain turkey sandwich-hot or cold. Here are some suggestions to get you started.
Madagascar Mayonnaise Mix 2 teaspoons curry powder, 2 teaspoons sweetened shredded coconut and 2 teaspoons warm honey into 1/2 cup mayonnaise. Spread mayonnaise on bread. Yield: 1/2 cup.
Olive Tapenade Mix 1/2 cup finely chopped oil-cured olives with 2 tablespoons Dijon-style mustard, 2 teaspoons capers and 2 teaspoons finely chopped chives. Top turkey with tapenade or spread it on bread. Yield: 3/4 cup.
Pineapple Salsa Mix together 1/4 cup prepared salsa, 1/4 cup drained crushed pineapple and 2 tablespoons chopped cilantro. Top turkey with salsa. Yield: 1/2 cup.
Cranberry-Apricot Chutney In a small microwave-safe bowl, mix together 2 tablespoons finely chopped dried apricots and 1 tablespoon balsamic vinegar. Microwave on high 40 seconds. Let stand for 2 minutes; stir in 1/3 cup whole cranberry sauce and 1/3 cup prepared mincemeat. Top turkey with chutney. Yield: 3/4 cup.
