  • 4 cups milk
  • 2 cups water
  • 1 1/2 tsp salt
  • 2 cups quick-cooking Irish oatmeal (mcCann's recommended)
  • 3/4 cup heavy cream
  • 6 tbsp dark brown sugar, packed

Preparation

Step 1

Preheat the broiler. Place the milk, water and salt in a large saucepan. Bring to a boil and sprinkle the oatmeal slowly onto the surface of the liquid so that the water does not stop boiling. Boil gently over medium heat for about 5 minutes, stirring occasionally. Place the cooked oatmeal into heatproof bowls. Pour 2 tbsp heavy cream around the edge of each bowl. Sprinkle the center with 1 to 1 1/2 tbsp of brown sugar (to taste).

Place the bowls under the hot broiler and broil until the sugar melts and begins to bubble 30 to 60 seconds). Serve hot with additional brown sugar in a bowl, and cream in a small pitcher. You may also want to provide small bowls of raisins, chopped pecans, and mini-chocolate chips.
