Ingredients
- 3 tbsp butter
- 1 cup onion, finely chopped
- 1/4 cup green bell pepper, finely chopped
- 1/2 tsp chili powder
- 4 cups cooked potatoes, diced
- 1 can (7 oz) Diced Green Chiles
- 1 cup Thick a& Chunky Salsa
- 1 cup cooked chicken, chopped
- 1/4 cup olive oil

Preparation
Step 1
Melt butter in large skillet; add onion, bell pepper, and chili powder. Cook for 5 minutes. Add potatoes, chilies, salsa, and chicken; cook for 2 minutes. Transfer mixture to medium bowl. Wipe the skillet with clean paper towels and add oil. Return mixture to skillet; fry over medium heat for 10 minutes or until brown. Top with fried or poached eggs and serve immediately.
