Ingredients
- 1/2 c - heavy whipping cream
- 6 tbsp - confectioner's sugar*
- 8 oz - cream cheese, room temperature
- 1 tbsp - fresh lemon juice
- 1 c - sugar
- 3 tbsp - cornstarch**
- 2 tbsp - unsalted butter, at room temperature
- 1 c - boiling water
- 1/2 c - strained orange juice
- 2 tbsp - grated lemon zest
- 8 - thinly sliced lemon wedges, for garnish (optional)
- 4 - mini gluten-free marshmallows***, cut in half, for garnish (optional)

Preparation
Step 1
To make the filling, whip the cream and confectioner's sugar together in the bowl of your electric mixer until it stiffens; and set it aside. In a clean mixing bowl, add the cream cheese and 1 tablespoon of lemon juice, and beat it until it is creamy. Using a rubber spatula or the paddle tool of your mixer, fold the whipped cream mixture into the cream cheese mixture.

Pour the mixture into a baked, gluten-free pie crust. (See the links below for suggested crusts.)
EDITOR'S TIP:
The juice in lemons and oranges vary, but to give you some idea of how many lemons you will need, 1 medium lemon yields 2 - 3 tablespoons of lemon juice. One medium orange yields 1/3 to 1/2 cup of juice. To extract more juice from lemons and oranges, begin with room temperature fruit. Roll the lemons and oranges on your countertop using the palm of your hand.

To make the lemon topping, add 2 tablespoons of sugar and cornstarch to a cold sauce pan and whisk them together. Add the butter, boiling water, 2 tablespoons of lemon juice, and lemon zest. Over medium-high heat, bring the mixture to a boil, while constantly whisking. Reduce the heat to medium and boil for 1 minute. Set it aside to allow it to cool to room temperature. Transfer the lemon curd into the small bowl of your mixer and beat it until it thickens.

Place the pie in the refrigerator for a minimum of one hour to chill prior to serving. If desired, garnish the top of your gluten-free lemon pie with slices of lemon and pieces of marshmallows.
If you are intolerant to corn, note that most brands of confectioner's sugar contain cornstarch, however, Trader Joe's brand contains tapioca starch and is corn- and gluten-free.
**You may use potato starch as a substitute for the cornstarch.
***Kraft brand mini marshmallows are gluten-free.
Because this gluten-free lemon pie tastes more like a cheesecake, think outside the traditional pie crust. Use a Gluten-Free Shortbread Crust or a Gluten-Free Graham Cracker Crust Made From Scratch. Of course a traditional Gluten Free Pie Crust will work as well.
The lemon topping may also be used as a filling for white or yellow cake.
