Ingredients
- 1 lb. ground beef
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 carrots, cut into 1/2-inch pieces
- 2 medium potatoes, peeled, cut into 3/4-in. chunks
- 1 medium onion, cut into 8 wedges
- 1 can (14 oz. beef broth)
- 1 medium zucchini, halved lengthwise, then cut crosswise into slices
- 1 can (14 1/2 oz.) diced tomatoes, undrained
- 1 jar (6 oz.) sliced mushrooms, drained
- 1 tbsp. Worcestershire sauce
- 1/2 tsp. dried thyme leaves
- 1/4 c. water
- 2 tbsp. flour

Step 1
1. In 3-qt. saucepan, cook beef, salt and pepper over medium-high heat until beef is thoroughly cooked; drain.
2. Add carrots, potatoes, onion and broth. Heat to boiling. Reduce heat to low. Cover, simmer 15 to 20 minutes or until vegetables are almost tender.
3. Stir in zucchini, tomatoes, mushrooms, Worcestershire and thyme. Cook, uncovered 5 to 10 minutes or until zucchini is tender.
4. In small jar with tight-fitting lid, shake water and flour until well blended. Gradually add to stew, stirring constantly; cook and stir until thickened and bubbly.
