This is my friend Mandy's favorite brunch casserole recipe.

Ingredients

  • 1 lb pork sausage
  • 3 C frozen hash browns (thawed)
  • 1/2 tsp. salt
  • 3 C (12oz.) shredded cheddar cheese
  • 1/2 C chopped green or red pepper
  • 12 eggs
  • 2 C milk

Step 1

Cook sausage in a skillet until browned. Drain. Place hash browns in a lightly greased 13x9 baking dish. Sprinkly with salt. Layer sausage, cheese and peppers. Combine eggs and milk in the blender, pour over ingredients in the casserole. Bake at 350 for 1 hour. (Can be made the night before and refrigerated.)
