Ingredients
- 1/2 cup olive oil
- 1/2 red onion, finely chopped
- 3 garlic cloves, finely chopped
- 1/2 small red chili pepper, seeded and finely chopped
- 1 tbsp chopped fresh cilantro
- 8 black olives, pitted and chopped
- Juice of 1 lime
- Salt and pepper
- 1 lb shelled cooked shrimp

Step 1
Mix together the oil, onion, garlic, chili pepper, cilantro, olives, lime juice, salt, and pepper to taste. Add shrimp and stir well. Cover and chill for at least 1 hour or overnight before serving.
