SPAGHETTI CARBONARA

Ingredients
- 1 LB SPAGHETTI
- 2 tablespoon bacon drippings
- 12 ounces diced browned bacon
- 1 SMALL ONION CHOPPED
- 2 eggs
- 1/4 cup parmesan cheese
- 1/4 cup romano cheese
- PEPPER
- 1/4 C CHOPPED PARSELY
- 1 clove garlic
- 1 1/2 cup frozen peas
- 1/2 cup chicken broth
- 1/2 cup white wine

Preparation
Step 1
Cook spaghetti - when almost done add green peas and cook for 2 minutes and reserve 1 cup cooking liquid
Cook bacon
Pour off all but 2 T fat add onion & garlic and cook until tender.
Remove skillet from heat
Whisk eggs with parmesan & romano cheese and parsley, broth, white wine and 1/2 cup cooking liquid
Drain pasta add to skillet with bacon and onion and then add egg mixture and toss to coat. Add extra cooking liquid if necessary
