Macaroni & Cheese, With Three Cheeses

Ingredients
- 4 tablespoons butter
- 1/4 cup King Arthur flour
- 4 cups milk, hot
- 1/2 teaspoon salt
- 1/4 teaspoon Tabasco sauce, or to taste
- 1/4 teaspoon ground nutmeg
- 8 ounces mozzarella cheese, grated
- 1/2 cup Parmesan cheese, grated
- 15 ounces (1 container) Ricotta cheese
- 1 pound macaroni
- 2 tablespoons parsley, chopped

Step 1
Preheat oven to 350 degrees.
Heat butter in a large saucepan until melted. Add the flour and stir until smooth. Continue to cook for and additional2-3 minutes. Gradually stir in the hot milk until smooth. Cook, stirring often until mixture begins to boil and starts to thicken. Stir in the Salt, pepper and nutmeg.
Meanwhile, cook the macaroni in a large pot of boiling water until al dente, about 8 minutes. Drain well. Transfer back to saucepan.
Stir 1 cup of the mozzarella, the Ricotta, 1/4 cup of the Parmesan and the chopped parsley into the cooked macaroni to blend. Add the white sauce. Taste and correct the seasoning.
Spoon into abutteered 9-inch-by-13-inch baking dish. Sprinkle the top with the remaining 1/2 cup mozzarella and 1/4 cup of the Parmesan cheeses.
Bake in 350 degree oven until browned on top and bubbly, about 45 minutes.
Serve immediately.
