Avgolemono (lemon chicken soup)

Ingredients

  • 5 c. Water
  • 3 env. Goya chicken bullion
  • 3 stalks of celery finely chopped
  • 1/2 carrot shredded
  • 1/2 - 2/3 c. Regular long grain rice
  • 4 eggs
  • 6 T. Lemon juice
  • More water or bullion as needed

Preparation

Step 1

In a 3- quart saucepan over high heat , heat water bullion and rice to boiling. Reduce heat to low add celery and carrots. Cook 15 - 20 min until rice and vegetables are tender.

In a small bowl beat eggs with a wire whisk. Add lemon juice and beat until frothy.

Into egg mixture stir a small of broth . Pour egg mixture into pot of broth. Stir until hot do not boil.

Add chopped, cooked chicken breast if desired.
