env. Goya chicken bullion
stalks of celery finely chopped
½ - ⅔
c. Regular long grain rice
T. Lemon juice
More water or bullion as needed
In a 3- quart saucepan over high heat , heat water bullion and rice to boiling. Reduce heat to low add celery and carrots. Cook 15 - 20 min until rice and vegetables are tender. In a small bowl beat eggs with a wire whisk. Add lemon juice and beat until frothy. Into egg mixture stir a small of broth . Pour egg mixture into pot of broth. Stir until hot do not boil. Add chopped, cooked chicken breast if desired.
