Ingredients

  • 2 eggs
  • 1 1/2 cups grated cheddar cheese, divided
  • 1 (8oz) can cream style corn
  • 1 (8oz) can whole kernel corn, drained
  • 1 pkg (8oz) corn muffin mix
  • 1 cup sour cream (or greek yogurt)
  • 6 tbsp butter, melted

Preparation

Step 1

1. Preheat oven to 350F. Beat eggs in a medium sized bowl. Add 1 cup of the cheese, both cans of corn, muffin mix, sour cream and melted butter. Mix until thoroughly combined.

2. Pour mixture into a greased 2qt baking dish. Bake for 45 mins or until the center is set. Top with remaining cheese, bake 2 mins more.
