Ingredients
- 1.5 goat cheese, softened to room temperature
- 2 tbsp shredded Monterrey Jack cheese
- 1/2 tsp. virgin olive oil
- 1/4 c. chopped Vidalia onion
- 1/2 c. frozen corn kernels, thawed
- 1 pinch black ground pepper
- 1/2 c. diced cooked skinless white meat chicken
- 1 tbsp chopped fresh cilantro
- 4 - Six inch corn tortillas
- Olive oil

Preparation
Step 1
Combine cheeses in small bowl and set aside.
Heat olive oil in a medium pan over med-low heat. Add onion and saute for two minutes. Add corn and pepper; saute for 1 minute. Add chicken and saute for 1 minute. Remove from heat then stir in cilantro.
Divide cheese mixture and spread over two tortillas. Layer each tortilla with half the mix and top with remaining tortillas.
Heat in frying pan for 5-6 minutes, flipping half way.
