Ingredients

  • 8 oz goat cheese
  • 1/4 cup panko crumbs
  • 2 cups strawberries,stemmed and halved
  • 1 Tbs honey
  • 1 Tbs balsamic vinegar
  • 2 handfuls romaine lettuce,cut into bite size pieces
  • 1 red onion,sliced thinly
  • 1 handful honey glazed pecans
  • 1 Tbs olive oil
  • 1 tsp mustard
  • salt and pepper to taste

Preparation

Step 1

Freeze the goat cheese for 20 min then slice into discs. Press the cheese rounds into the panko crumbs and place them on a cookie sheet lined with parch. paper. Bake in a preheated oven 425 for 6 min.
In the mean time,toss the strawberries in the honey and vinegar to coat. Place the strawberries in a baking dish in a single layer lined with parch paper. Roast the strawberries in the preheated oven until slightly caramelized, about 10-12 min.
Pour the juices from the pan into a bowl and mix with the olive oil,mustard, salt and pepper. Assemble salad and toss to coat with the dressing.
