Ingredients

  • 3 Tbsp Olive Oil
  • 1 Small Onion, chopped
  • 1/4 LB Fresh Sliced Mushrooms
  • 1/4 C Chopped Red Pepper
  • 1 Clove Minced Garlic
  • 1/2 LB Italian Sausage
  • (or Breakfast sausage)
  • (w/ Swiss Cheese)
  • 1/2 LB Fresh Spinach,
  • clean & chopped
  • 1/4 C Shredded Provolone
  • Cheese
  • Salt & Pepper to Taste
  • 4 Sheets Phyllo Dough,
  • thawed according to pkg.
  • 1/4 C Melted Butter
  • 8 Tbsp Dry Bread Crumbs

Preparation

Step 1

Heat oil in medium skillet over
medium high heat until hot.
Add onion, mushrooms, red pepper,
and garlic; cook and stir until
vegetables are soft. Stir in the
sausage, spinach, cheese, salt
and pepper; cook until vegetables
are tender. Set aside until cool.

Preheat oven to 375º.
Place 1 Phyllo sheet on work surface.
Brush entire sheet with butter &
sprinkle with 1/4 of bread crumbs.
(cover remaining sheets w/damp towel).
Repeat layers 3 times. Spread sausage
mixture over last layer; roll up,
starting at one short side, until long
roll forms. Place on baking sheet.
Brush w/remaining butter; bake 15 min.
or until golden. Let stand 5 minutes.
Cut into 1 inch slices. Serve Hot.
Refrigerate leftovers
