Pink Fluff Fruit Salad

Pink Fluff is an incredible fruit salad. This fruit salad is unique because of one special ingredient. Most creamy fruit salads have whipped topping, & so does this one. But this Pink Fluff doesn’t have cream cheese, yogurt, sweetened condensed milk, or the sour cream that other recipes use. This creamy fruit salad’s special ingredient is: cottage cheese. Don’t freak out! You know a lot of people eat cottage cheese with fruit right? Even if you hate cottage cheese with fruit, you really need to give this a try.
The “Pink” in Pink Fluff comes from the strawberry jello mix, and the “Fluff” comes from the marshmallows that make it light & airy. But this recipe is extremely versatile! You can also use raspberry jello mix or even switch it up & use any flavor of jello mix & fruit that you want. The point is, the jello, mixed with the whipped cream, really masks any savory flavor the cottage cheese puts out, not that cottage cheese is bad…. Just think of it as more protein, slightly less sugar & a tad healthier than the other creamy fruit salads (unless of course you are using greek yogurt.)

Ingredients
- 1 (8oz) tub whipped topping
- 1 (16oz) tub small curd cottage cheese
- 1 (3oz) box strawberry jello mix
- 1 lb strawberries, hulled & quartered
- 2 1/4 cups fresh pineapple chunks (or 1 can of pineapple tidbits)
- 1 (15oz) can mandarin oranges
- 1 (10oz) bag mini marshmallows (more or less to your liking)
- Optional: 1-2 bananas sliced, a can of sliced peaches, & some sweetened coconut flake is also great in this salad.

Preparation
Step 1
In a LARGE bowl (like a 14-cup bowl) combine the whipped topping, cottage cheese & jello mix. Fold gently until no streaks appear.
Add all fruit & marshmallows. Fold gently until combined. Great served fresh or stored for later use. The longer it sets, the more puffy & soft the marshmallows get, so serve it however you like it.
