Ingredients

  • 3 lbs fish fillets
  • 2 cups flour
  • 3 cups pancake mix
  • 3 cups club soda
  • 1 tablespoon onion powder
  • 1 tablespoon seasoned salt

Preparation

Step 1

Dredge fish fillets lightly in flour. Set aside on wax paper until dry.
Whisk club soda and pancake mix until the consistency of buttermilk-pourable, but not too thick. Beat in onion powder and salt.

Dip floured fillets in batter and fry at 425 in heavy skillet about 4 minutes per side.

Keep warm in a 325 oven until all fish is fried.
