  • For the Cookies
  • 200 gms Butter 1 cup
  • 150 gms. Sugar 3/4 cup
  • 2 eggs
  • 1 egg yolk
  • 1 tsp Vanilla
  • 2 tsp grated lemon peel
  • 2 Tbs. Cognac
  • 300 gms Cornstarch 1 1/2 cups
  • 200 gms flour 1 cup
  • 1 tsp baking soda
  • 1/4 tsp salt
  • For the Filling
  • 300 gms Dulce de Leche 1 1/2 cups
  • 50 gms grated coconut 1/4 cup

Preparation

Step 1

Beat butter till creamy. Add sugar and beat till fluffy. Add eggs and egg yolk, one at a time, beating well. Beat in vanilla, lemon rind and cognac. In another bowl sift together the cornstarch, flour, baking soda and salt. Add to the wet mixture and mix well with delicacy. Let the dough rest, covered, for one hour, in the refrigerator. To use, add some flour if necessary to have a non sticky dough. Open on a floured area and cut round shapes with a cutter of 4 cm. Place on a baking sheet. Bake at 180C for around 10 minutes. Remove immediately. Do not overcook. Sandwich the cookies together with the Dulce de Leche and roll the edges in the grated coconut.
