Strawberry and Blueberry White Chocolate Oatmeal Cookies

They are the best cookies ever. The cinnamon-y oatmeal is perfect and the cookie is so soft and chewy you wonder how it all stays together.
The longer they sit the softer they get. The moistness of the fruit just seems to be absorbed by the oatmeal as time goes by and it seems like they are literally melting in your mouth.
And the pops of strawberries and blueberries in the cookie? Divine. Seriously. The perfect balance of fruit, cinnamon and oatmeal.
The best. cookie. ever.
And the colors are just perfect for a patriotic holiday don't cha think? Fourth of July anyone?

Ingredients
- 3/4 cup butter
- 3/4 cup light brown sugar
- 1/4 cup sugar
- 1 egg
- 2 tsp vanilla extract
- 2 tsp cinnamon
- 1 3/4 cup flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 2 1/2 cups Old Fashioned Oats
- 1/2 cup white chocolate chips
- 1/2 cup cut strawberries
- 1/2 cup blueberries

Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Cream butter and sugars together until light and fluffy, about 3-4 minutes.
3. Mix in egg and vanilla extract.
4. Add cinnamon, flour, cornstarch and baking soda to a medium sized bowl and combine.
5. With the mixer on low speed, add flour mixture to butter and sugar mixture.
6. Stir in old fashioned oats and white chocolate chips. Dough will be thick.
7. Carefully add strawberries and blueberries.
8. Make dough into balls of about 2 tbsp, roughly the size of a ping pong ball. Flatten them out a bit and place on cookie sheet covered with parchment paper.
9. Bake for 10-11 minutes. They should be slightly golden on the edges and look a little underdone in the center.
10. Remove from oven and allow to cool for a couple minutes before putting on a cooling rack.
