  • 3 eggs
  • 6 tablespoons margarine, melted
  • 1 cup plus 1 tablespoon sugar
  • 1/4 cup buttermilk
  • 1 (3.5-ounce) can coconut, or 1 cup, packed
  • 1 teaspoon vanilla
  • 1 unbaked 9-inch pie shell

Preparation

Step 1

Preheat oven to 375 degrees.
In a large bowl, beat the eggs. Add the margarine, then the remaining ingredients and mix well.
Pour into pie shell and bake for 10 minutes.
Reduce heat to 300 degrees and bake 45 minutes longer, or until golden brown.
Makes 8 servings.
