Ingredients

  • 4 cups (1 L) halved strawberries
  • 1/4 cup (50 mL) fresh lime juice
  • 2 tbsp (25 mL) tequila
  • 2 tbsp (25 mL) triple sec or Cointreau
  • 1 tbsp (15 mL) grated lime peel
  • 1 can (300 mL) sweetened condensed milk
  • 1 1/2 cups (375 mL) whipping cream, whipped

Preparation

Step 1

Place strawberries, lime juice, tequila, triple sec and lime peel in a blender; puree until smooth. Add sweetened condensed milk and blend until combined. Transfer to a large bowl. Let stand for 5 minutes. Fold a quarter of whipped cream into strawberry mixture to lighten. Fold in remaining whipped cream until blended. Spoon mixture into margarita glasses or a serving bowl. Cover and freeze for at least 8 hours or up to 2 weeks. Serves 8-10.
COOKE’S NOTE
Triple sec is a type of curacao, which is a generic term for several orange-flavoured liqueurs. Triple sec is clear, colourless and quite sweet.
One of the most famous brand names of triple sec is Cointreau.
Pumpkin
There is a difference between pure pumpkin and pumpkin pie filling. Both products are sold canned and usually found side by side in the baking aisle of grocery stores. Pure pumpkin is simply pumpkin with no added ingredients. Pumpkin pie filling, however has other ingredients such as sugar, oil, salt and spices added to it. Check the labels carefully as these products are not interchangeable.
