Mini Peanut Butter Tarts

Ingredients
- 1 c butter, softened
- 1 c peanut butter
- 1-1/4 c firmly packed brown sugar
- 3/4 c granulated sugar
- 1 Tbsp vanilla extract
- 2 large eggs
- 2-1/2 c all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 c chopped honey-roasted peanuts

Step 1
Preheat oven to 350. Spray 2 (24 cup) mini muffin pans with nonstick cooking spray.
In a large bowl, beat butter and peanut butter at medium speed with a mixer until creamy. add sugars and vanilla; beat until fluffy. Add eggs, one at a time, beating well after each addition.
In a medium bowl, combine flour, baking soda, baking powder and salt. Gradually add to butter mixture, beating just until combined after each addition. Stir in peanuts. Spoon batter into prepared muffin cups.
Bake for 12 to 15 minutes or until centers are set and tops are lightly browned. Cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks. Store in airtight containers up to 1 week.
