Ingredients
- 1 (15oz) can black beans, rinsed and drained
- 6 (6 inch) corn tortillas
- 6 TBS shredded Cheddar cheese
- 2 cups shredded romaine lettuce
- 1 cup grated carrot
- 1/4 cup store-bought salsa

Preparation
Step 1
Microwave beans on high for 2 minutes or until heated through.
Heat a nonstick skillet over medium heat. Add tortillas, one at a time; cook for 1 minute on each side.
Divide beans evenly among tortillas; top each evenly with cheese, lettuce, carrot and salsa.
