- Topping:
- 15 mL active dry yeast
- 325 mL water
- 15 mL sugar
- 2 mL salt
- 750 mL unsalted, flour
- 10 mL cornmeal
- 50 mL margarine
- 1 clove garlic, minced
- Parmesan cheese

Step 1
Preheat oven to 425oF. Grease 1 large baking sheet. In large bowl sprinkle yeast over warm water stir with rubber spatula until well blended. With wooden spoon, gradually stir in sugar salt and enough flour about 750 mL until a soft and slightly sticky dough forms.
Turn dough onto well-floured board. To knead, fold dough towards you; with heel of hands, push dough away with short rocking motions. Rotate dough a quarter turn and repeat above motions. Continue kneading and turning about 5 to 7 mins adding another 125 mL or more flour if necessary, until dough is smooth and elastic. The surface of dough should appear blistered and dough shout not stick to board or hands.
Roll dough into rectangular shape. Sprinkle cookie sheet with cornmeal.
Place dough on cookie sheet cut into 2 inch strips. Bake for 12-15 mins till lightly browned.
Prepare topping:
Melt margarine, add crushed garlic clove. Spread over hot baked bread. Sprinkle Parmesan cheese over the bread.
