Ingredients
- Cream Cheese Icing:
- 2 c. flour
- 2 c. sugar
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1 c. Wesson oil
- 1 tsp. vanilla
- 4 eggs
- 3 c. finely-grated carrots
- 1/2 c. chopped pecans
- 8 oz Philadelphia cream cheese
- 1 box powdered sugar
- 1/2 c. butter
- 1/2 c. chopped pecans
- 2 tsp. vanilla

Preparation
Step 1
Sift together flour, sugar, cinnamon, baking soda and salt. Add oil and beat well. Add vanilla and eggs; beat well. Add carrots and pecans; blend well. Bake in a 9x13-inch greased and floured pan for 45 minutes at 350 degrees.
Icing: Beat until light and fluffy
