Ingredients
- chopped pecans 1 1/2 C
- onion - finely chopped 3/4 C
- sage 1 TB
- dried cranberries 1 C
- pancake mix 3 C
- salt 1 TB
- pepper 1 TB
- eggs 3 large
- buttermilk 2 C
- cranberry juice 1/2 C

Preparation
Step 1
place pecans in single layer on baking dish toast at 350 for 5 min
saute onion with sage until tender
add cranberries & juice & boil 10 min then remove from heat
mix pancake mix, salt & pepper
mix eggs & buttermilk then stir into flour mixture
add onion mix then pecans
spray frying pan & cook until golden brown on each side like tiny pancakes
serve with pumpkin soup or turkey
