Ingredients
- 4 cups low-sodium vegetable or chicken broth
- 1 lb fresh cheese tortellini
- 6 oz snow peas, trimmed and halved diagonally
- 2 Tbsp basil pesto
- Zest of 1 lemon
- 1/4 cup grated Parmesan, plus more for serving

Preparation
Step 1
1. Bring the broth to simmer in a large skillet. Add the tortellini and simmer until barely tender. 4 to 5 minutes, per package instructions.
2. Add the snow peas and simmer until the tortellini and snow peas are tender, 1 to 2 minutes. Remove from heat and stir in the pesto, then gently toss with the lemon zest and Parmesan. Serve with additional Parmesan, if desired.
