Sammy's #1 Salmon Patties

Ingredients
- 1 can (14 3/4 oz.) salmon
- 1/2 ium onion, chopped
- 2 eggs
- 1 teaspoon ground pepper
- 1 teaspoon fresh lemon juice
- 1 whole sleeve saltine crackers, crushed

Step 1
Empty 1 can salmon and juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.
Form into patties 3/4 to 1 inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes.
In large frying pan heat 1/2 inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold.
Patties will be beautifully brown, crunchy, and very delicious. Squeeze on some fresh lemon. mmmmm... they are to die for.

My Mom, who had to provide for 6 hungry kids when I was growing up, made salmon patties from salmon, eggs, pepper and crackers. However, adding the onion and lemon juice, as you suggest, improves the flavor tremendously! Thanks for posting this recipe. It is very good. My husband (from Alabama) especially likes it when I make a white gravy from the leftover salmon juice, so he can pour it on his mashed potatoes. I don't get it, since I'm from Ohio, but he likes it.
Very easy, even for a bachelor to make. They taste great! My Mom had a recipe very close to this, so I was eager to try it.

I used to make these with breadcrumbs, but they are so much better with the cracker crumbs - whole family loved them!

Imagine my surprise to find my hubby's salmon patty recipe posted on your site! He learned the recipe from the mother of his former boss 30 years ago! I love them so much! Leftover patties are good in a sandwich with ketchup. Sam is making them tonight and I can't wait.
These sound like the ones my Mother always made for us.
However, she served them with fresh, hot homemade biscuits and applesauce. Being raised in the South, we would cut open the biscuits, place the pattie inside, and eat it like that. Quick, cheap supper anytime!
Thanks for the recipe! I had to improvise a little but they were still delicious - instead of the crackers, I used roughly 2 cups Panko breadcrumbs (which are great in meatloaf too), added about a 1/2 teaspoon salt, and instead of chopped white or yellow onion, I used what I had on hand, about a big handful of chopped green onions and followed the rest of the recipe - used Olive Oil on a setting 6 on an electric stove top - they were perfect!
This is the perfect recipe that all our mothers made for us. My Mother always added chopped celery. It gives it a little more zing.....yummy.

Scrumptous! I always added milk in mine yet I didn't have any on hand went on google found this recipe and Walaah! I added bell pepper & green onion & 1/2 tablespoon of Mayo as well (umph umph umph) YUMMY!
I had OreIda Crinkle Fries as My side this time. I like rice as a side too. I believe the FUN of Salmon Patties is the different variations that give KICK!

I allways covered my patties with thin layer of yellow corn meal and then used red sauce w/tabasco for dip. Try it you'll love it.

Great recipe - make my own breadcrumbs so used two cups of those plus added about a teaspoon of Honey Dijon mustard and rather than two eggs substituted one egg with a tablespoon of miracle whip and rolled patties in Panko - great!!!!

I remember my mom used to make these and used bread and added bell pepper. I loved them dipped in mustard. I am going to try them tonight with the saltines since I don't have bread or bread crumbs on hand.
Great recipe. I didn't have any lemons but limes in place and used 5 minced green onions in place of the 1/2 chopped onion it was totally some wonderfully great salmon patties I ever had. Thumbs up on this one, thanks Sammy!

These are super! There were 5 kids in my family and this was a staple dinner. As good as I remember growing up! Definitely debone before mixing anything!

This is the same recipe my mother handed down to me, only thing different is she would mix mayo and mustard, warm it and pour it over the fried salmon patties. GOOD STUFF!!
My family LOVES these. I have a very picky husband, a 5 yr old and a 1 yr old. They all loved them. I did add 1/2 cup of mayo, 1 tsp mustard and 1/4 tsp dill warmed and served as a dipping sauce.

My step mom made salmon patties and white gravy when I visited and the Alabama biscuits(she's from Alabama). I don't remember the onion and lemon juice think I'll try it though. I have a Northerner to try to please and already ooohing the salmon patties. Haven't cooked them yet lol. Thanks this southern girl will like them 'Isure. :)
The best salmon patties I have eaten. I added parsley flakes and garlic powder. I also made the 1/2 cup mayo, 1 tsp mustard, and about 1/2 dill sauce. Awesome. One of my girls would never eat salmon patties. She ate these up.
Love 'em, love 'em, love 'em. The only thing I do different is use the canned salmon with the bones & skin already removed. And, I double the recipe, because there's never enough!
Almost exactly what my Nana used to make for my little cousins and brother when we were kids! I used one chopped green bell pepper and a small yellow onion though.
I've never used breadcrumbs in my patty recipes because I never had the time or patience to stand there and toast bread then crunch it up, but I found some saltine crackers and it took the patties to another level! Best ever!

Excellent!! Made these for lunch today. The only change I made was to add a chopped fresh Jalapeño w/seeds in addition to the onion.
I made these once before using this recipe and they turned out wonderful, but tonight I decided to add a whole onion instead of half (I'm new to the cooking game)... completely fell apart in the skillet. I just let the mess finish frying, and then I drained the grease using a strainer, mixed the fried salmon mush with some white gravy and served over rice, turned out amazing!
My mom-in-law makes these... they are awesome she adds just a hint of garlic... and we make parsley potatoes with it. Yum yum!
This was my very first time making salmon patties by myself and they turned out great! My mom made them all the time for my sisters and I growing up, and these are actually better than hers. Ssshh, don't tell her that. :)

This is the same recipe my mother used except we rolled the patties in yellow corn meal before frying. Really makes them crunchy.
Very good recipe.... I also altered it s little bit. I took the advice from a previous comment from Beth & added 2 cups of Panko bread crumbs & drained the juice from the canned salmon, only added a little bit of juice, but it really doesn't need any. To me it makes better parties. Other than that I follow the recipe has written.

That almost the same as what my mother handed down. She never added the lemon juice. Have to try it. Some of the other item also sound like tasteful additives. We always serve with mashed potatoes covered with creamed peas. I like ketchup on mine and my husband uses mustard.
