Broccoli-Chicken Crepes

Ingredients
- 1 (10 oz.) pkg. broccoli
- 12 crepes
- 2 Tablespoons butter
- 2 Tablespoons. flour
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 1/2 cups milk
- 3/4 cups Swiss cheese
- 2 cups cooked chicken
- Paprika

Step 1
Cook broccoli and set aside.
Melt butter. Blend in flour, salt, and nutmeg. Add milk, cook and stir until thick and bubbly, 2 minutes. Add Swiss cheese and cook until melted. Set aside.
Combine chicken, broccoli, and 1 cup cheese sauce. Spoon 1/4 cup filling along center of un-browned side of crepes. Roll and place seam in pan. Pour remaining cheese sauce over and sprinkle with paprika.
Cover and bake at 375 degrees for 18-20 minutes. Place under broiler for a few minutes to brown top. Be careful not to burn cheese.

EGGY THIN CREPES:
In blender combine 3 eggs, 1/2 cup milk, 1/2 cup water, 3/4 cup flour, 1 teaspoon sugar and 1/2 teaspoon salt. Mix until smooth. Bake in 8" crepe pan.
