Chicken and Wild Rice Salad

Ingredients
- Vinaigrette
- 1/3 c. sherry wine vinegar
- 1 garlic clove, minced
- 1 t. Dijon mustard
- 1 t. sugar (may need more)
- 2/3 c. olive oil (may need less)
- 3-4 chicken breasts, cooked and shredded
- 2 c. Wild Rice (cooked in chicken broth)
- 1/2 - 1 c. coarsely grated peeled carrots
- 1/2 c. chopped green onions
- 1/2 - 1 c. chopped celery
- 1/3 c. chopped toasted nuts (almonds, walnuts or pecans)
- 1/3 c. (packed) dried fruit (golden raisins, cherries, cranberries)
- 2 T. fresh herbs (tarragon, dill or parsley)

Preparation
Step 1
Mix vinaigrette ingredients together.
Prepare wild rice according to directions. Cool rice and mix with remaining ingredients. Add vinaigrette prior to serving.
