CAKE*****Laura Calder's Angel Cake

A light-as-air cake from Laura Calder topped with fresh fruit, a perfect end to any meal.
This really does taste like Angel Food Cake with half the work, as long as you watch it carefully when it's baking.
It would be great sliced in half and filled with some kind of cream filling (like whipped cream and crushed pineapple)
The second time I made this, I cut it in half. It perfectly fills my medium-sized, decorative bundt-type pan - and makes eight servings, which is a great plenty for us. The recipe has been reduced to 1/2 already

Ingredients
- 8 servings
- 3 eggs, separated
- 1/2 cup sugar (superfine if you have it)
- 1/2 teaspoon vanilla
- 1/2 cup sifted flour
- 29/03 /2013 - I added the grated zest of one large orange and about 1/2 tsp. lavender buds. It was very good and could probably take a whole teaspoon of the lavender. I bet lemon would be good too.
- Raspberry or Blackberry Coulis and Maple Vanilla Yogurt for serving (along with fresh strawberries, or other berries, if you have them.

Preparation
Step 1
*Heat* the Breville oven to 400°F *Spray* the bundt pan well with baking Joy.
*Using* the stand mixer with whisk attachment for all, *beat* the whites to stiff peaks, at least five minutes. *Beat* in the yolks, one by one. *Continuing* to beat, add the sugar and vanilla, and finally the flour. *You should have* a very high, mousse-like batter. *Pour* the batter into the pan and bake until golden on top, risen high, and a toothpick inserted in the centre comes out clean, about 25 minutes. (Cover loosely with a piece of foil after five to ten minutes [once it's risen] to avoid a burned top)
*Let* the cake cool 15 minutes the turn out onto a serving dish or cake stand and let cool completely. *Cover* and set aside until ready to serve.
