Potato Crab Cakes

Ingredients

• Lime Butter:
• mashed potatoes 1 C
• egg 1
• bread crumbs 1/2 C
• onion - finely chopped 4 TB
• fresh parsley 1 TB
• lime juice 1 tsp
• salt 1/2 tsp
• pepper 1/2 tsp
• crab meat 1 lb
• flour 1/4 C
• 1/2 C butter
• 4 tsp lime juice
• 1 tsp grated lime peel

Preparation

Step 1

combine potatoes, egg, 1 TB bread crumbs, onion, parsley, lime juice, salt, pepper. Gently stir in crab, shape into 12 patties

in small bowl combine flour & remaining bread crumbs
coat patties with this mix

fry until golden brown then bake

combine butter & lime for dip
