Ingredients

  • 2 t evoo
  • 4 skinless, boneless chicken breast
  • salt and pepper
  • 1 t dry sherry
  • 2 t golden raisins
  • 1/2 c pecorino romano
  • 1/2 c parsley
  • 1/4 c toasted pine nuts
  • 1 small chile pepper
  • 3 t chopped capers
  • 2 cloves minced garlic
  • 1 t lemon zest
  • 4 slices proscuitto
  • 1 t butter cut into 4 pieces
  • 4 lemon wedges

Step 1

1) preheat oven to 450. in large skillet heat evoo over md-high heat. season chicken and cook turning once for 4-6 minutes. transfer to plate

2) in same skillet, bring 1/4 c water and sherry to boil scraping up brown bits. in small bowl, pour liquid over raisins and let plump for 5 minutes; then drain and chop. in bowl combine raisins, cheese, parsley, pine nuts, chile, capers, garlic and zest

3) mound the stuffing onto chicken and wrap with proscuitoo. top each with butter. bake on baking sheet til proscuitto is crisp, about 5 minutes. serve with lemon wedges
