Hot Lobster Rolls

Many variations of the lobster roll exist, both hot and cold. This is a local favorite and is sure to be yours. A full-bodied Chardonnay or Chablis would be most appropriate.

Ingredients
- 2 , 1 1/2 lb. lobsters, boiled, meat removed
- 8 Tbls. (1 stick) unsalted butter
- 2 Tbls. minced shallot
- 2 Tbls. dry sherry
- 1 Tbls. fresh lemon juice
- pinch cayenne pepper (optional)
- 4 New England rolls (hot dog rolls with split tops and crust-less sides)
- 4 lemon wedges (optional)

Preparation
Step 1
In a skillet, melt the butter over medium heat. Add shallots; cook 2 minutes. Add sherry, lemon juice and cayenne pepper if using. Cook 3 more minutes. Add lobster meat and heat just through (don't cook it!). Remove from pan and set aside to keep warm.
In the same skillet, wipe the pan with each of the crust-less sides of the rolls (or butter each side of roll) and grill until golden brown, taking up any remaining butter in the pan with the roll.
Fill each of the grilled rolls with lobster meat divided equally. Serve with a lemon wedge.
