Ingredients

  • 1/2 cup butter
  • 2/3 cup crushed saltine crackers
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 pound fresh flounder, sole or perch filets (frozen fish, thawed and drained, may be substituted)

Step 1

Preheat oven to 350 degrees. In a 9 * 13-inch baking pan, melt butter in preheated oven; this should take about 5 minutes.

Meanwhile, in a dish, combine crushed crackers, Parmesan cheese, salt, basil, oregano and garlic powder. Dip filets in melted butter, then crumb mixture. Arrange filets in baking pan. Bakes for 25 to 30 minutes, or until fish is tender and flakes with a fork. Serves 2-4 servings.
