  • 1/2 cups oat bran
  • 1/2 c ups all-purpose flour
  • 3 tablespoons firmly packaged brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 egg
  • 2 tablespoons oil
  • 1/2 cup juice (apple or orange)
  • 2 tablespoons honey
  • 1/2 cup chopped nuts
  • 1/2 cup berries
  • Cinnamon-sugar

Preparation

Step 1

In a medium bowl combine the oat bran, flour, brown sugar, baking power, salt, an cinnamon.

In a large bowl mix the egg, oil, juice and honey. Add the dry ingredients, mixing just until moistened. Fold in the nuts and berries. Spoon into muffin cups. Sprinkle with cinnamon-sugar. Bake in a 375 degree oven for 20 minutes.

Makes 12 muffrins
